Cooking With Cannabis: THC Infused Nachos

We get it, being stuck at home during the pandemic is a less than stellar option for those looking to get out and about for some good eats. Luckily for you, The cannabis community has you covered with some great recipes to help fill the time. You’re stuck at home anyway, what a great time to connect with your inner 5 Star Chef... In today’s blog, We’re going to show you a recipe that’s sure to be a hit for the times when smoking just won’t cut it. Using a few key ingredients that you probably already have kicking around at home, this recipe is one that you’re going to want to add to your collection. So get ready to chow down on some cheesy goodness, and don’t forget to preheat the oven. 

Getting started with this recipe, You have two options: 

 

OPTION #1: THE EASY WAY - CANNABIS OIL 

You can make things a bit simpler by heading down to one of our stores to purchase some Cannabis oil, such as this wonderful option from solei, called Balance. It contains a nice even 5.12mg of THC and 5.04mg of CBD for an even, balanced cannabis experience. Just remember to only add a few drops (not too many) Once you’ve purchased your cannabis oil, skip ahead past option #2 to the next step. 

 

OPTION #2: THE OG WAY - CANNABUTTER 

The second of two options you have, This one requires a bit more work. You’re going to need to make some cannabutter. We’ll need this extremely important ingredient for the nacho cheese. Without it, these are just plain old’ nachos, and given the title of this blog, that just won’t cut it. Here's a quick guide on making your own cannabutter: 

  1. Decarb cannabis: Preheat your oven to 245ºF. Place your cannabis buds on a non-stick tray. Cover tray with parchment paper to prevent your cannabis from sticking. Making sure buds are evenly spaced, put the tray into the oven and set a timer for 30-40 minutes, checking every 10 minutes. 
  2. Grind it up: Once you’re finished with the oven, Grind the decarboxylated cannabis coarsely with a grinder.
  3. Melt your butter: Add 1 cup of water and 1 cup of butter into a saucepan. Simmer on low and let the butter melt. Add in a bit of water gradually to prevent major Burnage. 
  4. Add your cannabis: As the butter begins to melt, add in your coarsely ground cannabis product.
  5. Simmer it slow: Maintain low heat, remember when it comes to cooking usually low and slow is best. let that mixture simmer for 2 to 3 hours, stirring occasionally. The mixture shouldn’t come to a full boil.
  6. Strain the butter: Set a funnel on top of a jar and line it with cheesecloth. Once the butter has cooled off, pour it over the cheesecloth funnel and allow it to strain freely. 
  7. Refrigerate the butter. If excess water forms at the bottom of the jar, you can remove the solid butter with a knife and drain the water out. (The butter will need to refrigerate for about an hour before removing the water.)

 CREATING THE CHEESY MASTERPIECE:

Once you’re satisfied and have mastered the art of making your canna-butter, You’ll need to combine a few more ingredients before you’re free to chow down. First, start off by separating your Canna-butter in a separate container (we’ll need it later on..) and then following these instructions: 

  WHAT YOU'LL NEED: 

  • 2 tbs Cannabutter or Cannabis Oil
  • 1/2 half onion, chopped 
  • 1 jalapeño pepper, chopped 
  • 1/4 tsp pepper
  • 2 tsp garlic paste
  • 2 tsp flour
  • 1 cup milk
  • 2 cups cheddar cheese
  • 1/2 cup olive oil
  • 1 green onion

INSTRUCTIONS:

  1. In a large saucepan, set to medium heat, and using a whisk, melt the canna-butter (substitute with Cannabis oil if you purchased).
  2. While stirring with the whisk, add the onion, and sauté. Add the jalapeño pepper, and sauté. Continue to whisk as you add, the cayenne pepper, garlic paste, and flour.
  3. Gently pour the milk into your mixture and stir. Now, add the cheese and whisk. Your nacho cheese should be smooth and creamy.
  4. Remove cheese from the heat and transfer to a serving bowl. Garnish with sliced green onions on top.
  5. Let cool and serve.
